A favorite from my book, "From Tapas to Meze", I like to mash this salad to be more like a dip, Either way, it's delicious with some nice warm pita bread!
8 ounces feta cheese1 tablespoon extra virgin olive oil2 to 3 tablespoons fresh lemon juicesalt and freshly ground pepper1 medium English cucumber, peeled, seeded, 1/2" dice1 small red onion, 1/4" dice3 tablespoons fresh chopped mint2 tablespoons fresh chopped parsley2 tablespoons fresh chopped dillsprigs of dill and mint3 wedges of lemonpita bread (homemade or good quality store bought)
Crumble the feta into a bowl and mash together with olive oil, lemon juice, salt and pepper. Add the cucumbers, onions, mint, parsley, and dill.
Place on a serving plate and garnish with sprigs of dill, mint and wedges of lemon. Serve with warm pita bread.
